Dallas actually stuck to his guns, and says everyone should keep drinking the Cabernet Franc he suggested back in Part 1!
Dave’s Pairing
Dave says nah, dawg, these final 3 episodes are extra intense so you gotta extra intensify the Cab France to go with it!
I paired a cool climate Cab Franc (Fingerlakes, New York!) for Eps 4-6, but for 7-9 you need a warm weather Cab Franc, from Paso Robles, baby!
Brady Vineyard Paso Robles Cabernet Franc 2021
You need the greater intensity for these intense final episodes - more extraction, more "sweetness" (not literal sugar sweetness, but jamminess), yet still with Franc's typical acidity and green pepper bite. The wine I drank and featured in the episode is from Lorimar Winery but that Cab Franc is not currently available, so Brady Vineyard, also from Paso, is an excellent, available alternative that I’ve tasted before, and thoroughly recommend!
Dark berry and tobacco on the nose, gentle acidity and pyrazine “greenness”, this is juicy and deep without being overly heavy or cloying.
